What is the Cold Chain?
The cold chain is the unbroken sequence of temperature-controlled environments that fresh produce passes through from the moment it is harvested to the moment it reaches its final destination. It starts in the field or orchard, moves through the packhouse and cold store, continues in a refrigerated container on a ship, and ends in the buyer's facility.
Why Does it Matter?
Fresh produce is alive. After harvest, it continues to respire and age. Temperature is the primary factor that controls how quickly this process happens. At the right temperature, produce can maintain its quality for days or weeks. At the wrong temperature, quality deteriorates in hours.
A break in the cold chain, even a brief one, can cause significant and often irreversible quality damage. Produce that looks fine when it is packed may arrive at its destination soft, discoloured, or mouldy if the cold chain was compromised at any point during transit.

Every buyer should ask their South African supplier to confirm their cold chain protocols at each stage. Specifically: what is the pre-cooling process and how quickly does produce reach target temperature? What temperature is maintained in the reefer container? Can they provide temperature data loggers with each shipment?
