The Perfect Baked Mango Cheesecake

Ingredients

For the Crust:

  • 200g digestive biscuits (or graham crackers), crushed

  • 100g unsalted butter, melted

  • 2 tbsp sugar (optional)

For the Filling:

  • 500g cream cheese, softened

  • 200ml heavy cream

  • 1 cup mango purée

  • 150g sugar

  • 1 tsp vanilla extract

  • 3 large eggs

  • 2 tbsp cornstarch

For the Topping:

  • 1/2 cup mango purée

  • 1 tbsp sugar

  • 1 tsp lemon juice

Instructions

Step 1: Prepare the Crust

  1. Mix the crushed biscuits with melted butter and sugar (if using).

  2. Press the mixture into the base of a springform pan.

  3. Bake at 160°C (320°F) for 10 minutes, then let it cool while preparing the filling.

Step 2: Make the Filling

  1. Beat the cream cheese and sugar until smooth.

  2. Add the mango purée, vanilla extract, and cornstarch, mixing well.

  3. Add the eggs one at a time, beating at low speed until just combined.

  4. In a separate bowl, whip the heavy cream until soft peaks form, then fold it into the mango mixture.

  5. Pour the filling over the crust and smooth the top.

Step 3: Bake the Cheesecake

  1. Preheat the oven to 160°C (320°F).

  2. Place the cheesecake in a water bath (wrap the bottom of the springform pan with foil to prevent leaks).

  3. Bake for 50–60 minutes or until the center is set but slightly wobbly.

  4. Turn off the oven and let the cheesecake cool inside with the door slightly open.

  5. Refrigerate for at least 4 hours or overnight to set.

Step 4: Prepare the Topping

  1. In a saucepan, heat the mango purée, sugar, and lemon juice over low heat until slightly thickened.

  2. Let it cool before spreading over the cheesecake.

  3. Garnish with fresh mango slices if desired.
